Pisang goreng or fried bananas are an Indonesian favorite snack, dessert, and breakfast item. Sweet bananas are thinly sliced, covered in a crispy sesame and coconut batter, and glazed in caramelized sugar glaze. These super crispy and addicting fried bananas are delicious when enjoyed with a scoop of vanilla or coconut ice cream. They are also just as tasty when served plain even without the caramel glaze!
What you need to make fried bananas
- Thai bananas or plantains
- All purpose flour
- Rice flour
- Salt
- Sugar
- Vanilla extract
- Salted butter
- Toasted sesame seeds
- Sweetened coconut flakes
- Water
The best bananas for pisang goreng
Pisang goreng is traditionally made with pisang kepok or pisang raja. These hybrid bananas are sweet, short, and plump. Although they are commonly found in Southeast Asia, it can be difficult to find these variations in the United States. Thai bananas or regular plantains are a great alternative for this pisang goreng recipe. You should choose Thai bananas the way that you choose your regular household bananas. Thai bananas should be bright yellow and have as little bruising as possible. The method for choosing the right plantains is a little different. The browner and darker the peel the sweeter the plantains will taste. I prefer to use plantains that are about 75% brown and 25% yellow. If you prefer a sweeter banana filling, you can also use plantains that are completely covered in brown peel as long as they are still firm. If you really can’t find Thai bananas or plantains, you can use bananas that are almost ripe but still firm. Avoid using bananas that are overly ripe since they will not hold well when covered in batter and fried.
How to make fried bananas
- Peel bananas or plantains. Cut in half length wise and then cut into thin slices. Each plantain should result in about 8 pieces and each Thai banana should result in about 4 pieces.
- In a large mixing bowl, mix all purpose flour, rice flour, salt, and sugar together. Add in 1 cup of cold water and mix until lump free. Melt butter in the microwave and add melted butter to batter. Add in vanilla extract, sesame seeds, and coconut flakes. Use a whisk to mix everything together until smooth. Batter should be a medium consistency similar to the thickness of half and half.
- Put sliced bananas into the batter and coat banana pieces equally. Batter bananas in batches as necessary. Make sure all sides of the bananas are covered in the batter.
- In a large frying pan, heat up 2 cups of oil or amount necessary to fill half the pan with oil to shallow fry.
- To test if oil is hot, add a dollop of batter. If batter quickly hardens then oil is ready. Once oil is hot and bubbling, turn down heat to medium. Carefully add in bananas in batches. Don’t overcrowd the pan.
- Use a spoon to drizzle more batter on top and on the sides of bananas in the oil. This will help create a textured and super crispy fried banana. After about 2 minutes, flip bananas and drizzle other side of bananas with more batter. Keep flipping bananas every 1-2 minutes until bananas are crispy and golden. Total frying time should be about 7-10 minutes.
- Once bananas are golden and crispy, remove from bananas from oil. Let bananas cool in a strainer, rack, or on top of paper towels to remove excess oil.
Caramelized sugar glaze
- Once all the bananas have finished frying, you can make an optional caramel glaze. In a small frying pan or pot, add in sugar. Try to spread sugar out evenly in pan and turn heat on low. Slowly heat sugar up until it has melted and turned into a brown caramelized liquid. Caramel glaze will be very hot so be extra careful when handling and do not get tempted to taste test! It will burn your tongue.
- Place bananas on a glass plate or rack. Use a spoon to drizzle caramel glaze over bananas. Let caramel glaze cool and harden before serving. Enjoy as is or with a scoop of vanilla or coconut ice cream!
